It is true that some food would go bad if you prepare it ahead of time but there are certain dishes that would not go bad. For instance, it is possible for one to make the stuffing and the sauces ahead of time. Furthermore, if one is planning on preparing any casserole dishes they can prepare them ahead of time and then place them in the blast chiller till the big day because one can easily pop it in the oven to thaw it before the big meal is served.
